Saba's Christmas Special Bread Pocket Recipe:
Ingredients:
1 tsp butter
1 clove garlic, finely chopped
1 onion, finely chopped
1 carrot, 1capsicum finely chopped
3 tsp sweet corn
3 tsp pizza sauce
3 olive, sliced
1 tsp jalapeno chopped
1/4 cup mozzarella cheese, grated
8 slices of bread white or brown
Oil for frying
Method:
Let's split the method into 4 parts:
First Step:
In a wok, heat one tsp of butter and sauté garlic, onion, or spring onions. Add carrot, capsicum, and sweet corn with a pinch of salt. Stir-fry on high flame until the veggies are half-cooked. Now, add 3 tsp of pizza sauce and mix well. Transfer to a bowl and allow it to cool completely. Finally, add olives, jalapenos, and mozzarella cheese. Mix everything well.
Second Step:
Take two bread slices and trim off the edges. Roll both slices together to make a very thin roll. Give it a round shape with a cookie cutter or any round object. Prepare all the bread slices in a round shape and place them on the board.
Third Step:
Prepare the slurry with a 1:2 ratio of one tbsp cornstarch to two tbsp refined flour. Add a dash of salt and chili flakes to the refined flour, then add water and adjust as necessary. Whisk the mixture until smooth to avoid any lumps before adding it to your recipe. Spread breadcrumbs on a plate.
Heat a pan with oil. Dip the bread circle in the slurry, then coat it with breadcrumbs. For extra crispiness, repeat the process. Fry it until it is golden brown. Cut it in the middle and divide it into two. Now you have a very nice bread pocket.
Final Step:
Time to assemble! Spread ketchup on the inner side, place some sliced salad, and fill the bread pocket with the prepared fillings. You can also be creative with the fillings. Serve with some sauce.
