eet Dr. Archana R.S, a year old Lifelong Learner and retired Professor and Dean from the College of Home Science in Bikaner. Now residing in New Delhi, she shares with valuable insights into healthier Diwali sweets, with a special focus on those crafted using millets.
Archana's inspiration for exploring millet-based sweets as a healthier alternative for the festive season is rooted in her quest to create nutritious options for Diwali treats. She emphasizes the health benefits of millets, stating, "Millets are not only delicious but incredibly nutritious, offering a unique and tasty experience while maintaining the festive spirit." These tiny grains are rich in fiber, vitamins, and minerals, making them an ideal choice for those looking to enjoy Diwali without compromising their health.
Incorporating a variety of millets, such as pearl millet, foxtail millet, kudo, and barnyard millet, Archana explains how each imparts a unique flavor and texture to the sweets. Furthermore, these millets are gluten-free and have a low glycemic index, making them suitable for those with dietary restrictions or those seeking to manage their blood sugar levels.
Today, she wants to put focus on one of her favorites, Jowar Millet and Berry Cupcakes. Here is the recipe for you to make this Diwali as a healthier alterative to traditional sweets for your family. Ingredients:
- Jowar flour - 1 cup
- Wheat flour - 1/4 cup
- Rolled oats - 1/2 cup
- Baking powder - 1/2 tsp
- Baking soda - 1/2 tsp
- A pinch of salt
- Sugar - 1/2 cup
- Milk/coconut milk - 1/2 cup
- Melted plain butter - 1/4 cup
- Egg (optional)
- Vanilla extract - 1 tsp
- Mixed berries (blueberries, raspberries)
- Chopped nuts (almonds/walnuts) (optional)
Method:
- Sieve the dry ingredients.
- Mix sugar, melted butter, and milk (and egg, if using).
- Add berries and nuts to the dry ingredients. Mix well and pour into cupcake molds.
- Preheat the oven for 5 minutes.
- Place the cupcake molds in the oven and bake for 15-20 minutes. Check with a knife – if it comes out clean, your cupcakes are ready to be served.
Archana is all about adding a healthy twist to classic Diwali recipes, even everyone’s favourite ladoos by sweetening them with dates or jaggery instead of sugar. Her focus is on preserving traditions while encouraging healthier alternatives.
